Giant Creeping Pancake

Also known as a puff pancake or Dutch baby (where did that come from!?), giant creeping pancakes are fun to watch and delicious to eat. I made one for a lazy vacation breakfast when I had family to visit. I recommend topping with lemon juice and a sprinkle of powdered sugar, but fresh berries would also be delicious.

Giant Creeping Pancake
1/2 cup milk
2 large eggs
1/4 tsp. salt
1/2 c. flour

4 Tbsp. butter

For this one, you’ll want to haul out your 10 to 12 inch cast iron skillet. Put the butter in it and pop into a 425 oven until it’s melted. Meanwhile, whisk together until smooth the rest of your ingredients. Pull the hot skillet out of the oven, swirl to ensure it is thoroughly coated in butter, and pour in your whisked ingredients. Bake 15 minutes (don’t open the door), lower the heat to 350 and bake 10 more. Serve immediately, as the pancake will start falling as soon as you open the oven door.

      Well, it wasn’t really all that “lately.” See above for what I’ve really been doing- that and banana-peach smoothies.
