Salty-Sweet Coconut Butterscotch Blondies

Sometimes you just need a quick, simple recipe for say, a bake sale. A bake sale, let’s say, where everyone else has already promised to bring chocolate. What do you do? Blondies are easy, fun, and unlikely to be made by anyone else: perfect! I found this recipe to be startlingly salty for the very small amount of salt in them. It’s a recipe I had mixed feelings about, it seemed too salty for a dessert, yet every time I finished a bite I’d crave another. This is one for the salty-sweet lovers in this world.

Coconut Butterscotch Blondies
1/4 cup melted butter
1 cup dark brown sugar
1/2 t. vanilla
1 egg
3/4 cup flour
1 t. baking powder
1/2 t. salt
1/2 cup shredded or flaked coconut

Preheat the oven to 350 and grease a square 8×8 baking pan. Stir the brown sugar, vanilla, and egg into the melted butter. Mix in the dry ingredients and then the coconut. Spread evenly in the pan and bake about 25 minutes until a toothpick inserted into the center comes out clean. Or you could pull them out early if you like your blondies gooey 🙂

Note: If coconut blondies sound good but you’re not sure about having something salty, just decrease the salt by half.
