Daring Bakers: Quick Muffins

This month’s challenge was simple and left plenty of room for creativity–the best kind! Since we had to make some sort of quick bread, I opted for muffins. My favorite muffins, in fact:
Oatmeal Cinnamon Muffins
based on the recipe in Betty Crocker
1 c. white whole wheat flour
1 c. rolled oats
1/4 cup sugar
1 tsp. salt
1 Tbsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg
3/4 cup milk
1/2 cup canola oil
1 egg
cinnamon sugar to top
Preheat the oven to 400 and grease the bottoms of 1 regular 12-count muffin tin.
Combine the dry ingredients (except cinnamon sugar) thoroughly. Mix in the wet ingredients all together; stir just until thoroughly moistened. Spoon into pans and sprinkle the tops with cinnamon sugar. Bake ~18 minutes. Enjoy with butter or topped with fresh berries.

She supplied us with a base recipe and shared some recipes she loves from various websites and encouraged us to build upon them and create new flavor profiles.
